On a balmy spring night not too long ago, we cozied up in the back bar of Monk’s Cafe to greet our pals at the end of their 9-hr road trip from Portland. Tom Peters, proprietor and mentor to these lovely gents, toasted Tim and Fava’s success in the very room where they celebrated the purchase of their fermented and brewery. Lauding Maine’s burgeoning beer scene, Philly’s patron saint of craft brews gave the boys a big pat on the back. Fava stepped in to say what an honor it is to be at Oxbow with Tim – “the coolest guy in the industry you guys don’t know yet.”
